OK, I did the math (and it may be off), and using Mr. Recovering-Addict's numbers it would take approximately 1.73 years of non-stop playing to get all the FFXI class achievements. That's called not worth it.

btw, my math was:
((((75/62)*700)*18)/8766)
Where 700 is the amount of hours it takes to get to lvl 62, 18 is the amount of classes, and 8766 is the amount of hours in a year.
